Our boat club in Osage Beach has had the joy off seeing all sorts of people come to the Lake and have such a great time fishing. Freedom Boat Club knows it is cold outside but the fish don't care. These colder temperatures can actually cause the bass to feed more heavily making an ultimate fishing trip for you. Spiced Irish Coffee Recipe
serves 2
INGREDIENTS:
For the pumpkin spice whipped cream:
1/2 cup heavy cream
1.5 teaspoons sugar
1 teaspoon pumpkin spice*
For the Irish coffee:
1.5 cups freshly brewed hot coffee
1 tablespoon sugar
4 tablespoons whiskey
DIRECTIONS:
For the pumpkin spice whipped cream:
Whip all ingredients to stiff peaks.
For the Irish coffee:
RECIPE NOTES:
*Make sure you use very finely powdered pumpkin spice for this, otherwise you will end up with tiny pieces of spice in your whipped cream that will drive you nuts.

BOOZY PUMPKIN WHITE HOT CHOCOLATE (2 WAYS)

US Customary - Metric
1/2 cup white chocolate chips (or chopped)
2 1/2 cups milk (I used 2%)
1/4 cup pumpkin puree
1/4 tsp pumpkin pie spice
1 ounce Kahlua (or sub half as much Bourbon)
Whipped cream and caramel (optional // for topping)

Earl Grey Hot Toddy
SERVES 2
Ingredients
2 Earl Grey tea bags
1 1/2 cups boiling water
1-2 oz of your favorite bourbon
4 Tbsp of fresh lemon juice
2 Tbsp of honey (more if you want it a little sweeter)
Instructions
Put the water in a saucepan and bring to a boil.
Remove the water from the heat, add in the tea bags and cover.
Allow the tea to steep for about 3-5 minutes.
After a few minutes, pour in the lemon juice and mix in the honey.
Add 1/2-1 oz of the bourbon to two coffee mugs, pour the tea mixture over each.
Garnish with a slice of lemon.

Ingredients
US Customary - Metric
1/2 cup white chocolate chips (or chopped)
2 1/2 cups milk (I used 2%)
1/4 cup pumpkin puree
1/4 tsp pumpkin pie spice
1 ounce Kahlua (or sub half as much Bourbon)
Whipped cream and caramel (optional // for topping)
Instructions
- In a saucepan over low-medium heat, melt the chocolate chips and 1/2 cup of the milk (amount as the original recipe is written // adjust if altering batch size), whisking often (about 3 minutes).
- Once melted, add the rest of the milk, the pumpkin and the pumpkin pie spice and stir vigorously to incorporate.
- Pour a small amount of the hot chocolate into serving glasses (two as the original recipe is written), add Kahlua OR bourbon (bourbon is much stronger in taste).
- Top off with hot chocolate, stir and then top with whipped cream, caramel sauce and more pumpkin pie spice (optional).
