The Best Boat Snacks of 2018
Calling all "foodies," this blog is for you! What's a boating trip at the Lake of the Ozarks without some AMAZING boat snacks? Freedom Boat Club at the Lake of the Ozarks believes in "hassle-free boating." You should be able to relax and "live the life" while boating on our boats. Hassle-free means NO WORRIES. What's better than eating some awesome food in the middle of the beautiful Lake of the Ozarks with some great friends? Here are some fantastic boat snack recipes we found online.

Chicken Enchilada Roll Ups
Servings: 80 rolls
Ingredients
2 (8-oz) packages cream cheese, softened
1 1/2 cups shredded Mexican cheese
2 tablespoons Old El Paso taco seasoning
2 cups shredded chicken (rotisserie chicken works well)
1 (10-oz) can diced tomatoes with green chilies, well drained
1 teaspoon minced garlic
4 green onions sliced
1/2 cup chopped cilantro
8 burrito sized tortillas
Instructions
In a large bowl, combine all of the ingredients (except tortillas) until well blended.
Spread about ½ cup of the mixture over the entire surface of a tortilla. Roll up tightly. Repeat with remaining tortillas.
Refrigerate until firm, at least 30 minutes. Also, if you chill longer they will be easier to cut.
Slice into 1/2 inch slices with a serrated knife to prevent crushing and serve.

Cucumber Sandwiches
INGREDIENTS
8-ounce package whipped cream cheese
1 pound loaf cocktail rye bread
1 English cucumber, thinly sliced
1 teaspoon dried parsley
3/4 teaspoon black pepper
1 teaspoon seasoned salt (If you don’t have this on hand, omit it)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon dried dill
DIRECTIONS
In a large bowl, use a large spoon to combine the whipped cream cheese with 1 teaspoon dried parsley, 3/4 teaspoon black pepper, 1 teaspoon seasoned salt, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/8 teaspoon dried thyme.
Thinly slice the cucumber and pat the slices dry with paper towels to prevent the bread from getting mushy from the moisture in the cucumbers.
Spread a thin layer of cream cheese mixture on each piece of bread, then arrange 1-2 cucumber slices on top.
These are best served immediately. If you are making them ahead of time, be sure to really pat those cucumbers dry with a paper towel so that you aren’t left with soggy cucumber sandwiches.

Cheddar Ranch Dip
1 (16 ounces) container sour cream
Daisy Sour Cream Regular
1 (1 ounce) package dry Ranch-style dressing mix
1 (3 ounces) can bacon bits
1 cup shredded Cheddar cheese
Directions
In a medium bowl, thoroughly blend the sour cream and ranch-style dressing mix. Mix in the bacon bits and Cheddar cheese. Chill in the refrigerator 20 minutes or longer before serving.
